A seasoned hospitality professional Sue Walker has worked in the industry for over 30 years working in a wide variety of different restaurants and venues before joining Sodexo in 2006 to lead the restaurant operation of Bateaux London. After a nine year stint on the boats Sue moved to The Crystal in London’s Royal Victoria Dock.
As Sue’s interest in sustainability first started many years ago whilst sharing a flat with a Danish friend and discovering the wide gap between the Scandinavian and UK approaches to re-cycling and sustainability, this move to one of the world’s most sustainable event venues gave her the opportunity to continue to highlight the need for a proactive approach from the industry.
